The theme for Dorsett Kuala Lumpur’s 2024 Ramadan Buffet is “Sajian Rasa Nusantara,” featuring a diverse array of Nusantara culinary delights. For those unfamiliar, you might be wondering, what exactly is “Sajian Rasa Nusantara”? Let’s dive in and explore.

Grills and Satay

Nusantara grilling differs from the typical Western method. Ingredients are marinated, drizzled with sauce while grilling, or wrapped in banana or turmeric leaves. The marinades and sauces are produced from a variety of local herbs and spices.

Kambing Golek Berempah Madu

The whole roasted lamb is a traditional Ramadan dish. Dorsett Kuala Lumpur is introducing “Kambing Golek Berempah Madu,” a seasoned whole lamb enhanced with honey that has a savory and delicately sweet flavor.

Chef’s special tomato-flavored rice is slightly tangy and pairs perfectly with the roasted lamb.

Chicken & Beef Satay

No feast during Ramadan is complete without chicken and beef satay – a signature dish in the Nusantara culinary scene.

Remember to pair it with Lemang and Nasi Impit.

Nusantara Cuisine Specialties

“Nusantara” translates to “outer islands” and represents the culinary style of the Southeast Asian Malay Archipelago, including Indonesia, Malaysia, Singapore, the Philippines, Brunei, East Timor, and southern Thailand. Nusantara cuisine is influenced by the region’s diverse nature, history, vast geography, and culture, resulting in a wide range of dishes. It is characterized by the abundant use of local herbs and spices, covering meats, seafood, vegetables, and rice.

Kari Kepala Ikan Mangga Muda

Popular in mango-rich regions, this curry features a rich and flavorful broth, complemented by soft and tender cooked mango.

Pansuh Manok

Pansuh Manok is a traditional Iban cuisine from Sarawak, Malaysia, which means “chicken in bamboo” in the Iban language. Tender chicken pieces are marinated and then placed into a newly cut bamboo stalk. The bamboo is then grilled over embers, allowing the smoky flavor of the bamboo to permeate the chicken and produce a wonderfully enticing scent.

Daging Salai Masak Lemak

A traditional Malay dish with smoked beef cooked in coconut milk and spices. The smokey aroma of the beef blends beautifully with the creamy coconut milk, offering a rich and spicy flavor.

Puyuh Percik

Puyuh percik is particularly popular in Indonesia and Malaysia especially during Ramadan. The word “Percik” aptly describes the key preparation step where the cooked quail is generously coated in a spicy and aromatic sauce.

Tumis Darat Telur Itik

“Darat” means “land” in Malay, signifying a dry (non-liquid) cooking technique. This dish involves cooking duck eggs and stir-frying spices separately, before adding them altogether for final presentation.

Ramadan Classics

After a day of fasting, Muslims traditionally break their fast with dates and warm water.

Other classics include Bubur Lambuk.

Or hearty meat soups like “Sup Daging Campur Serai Wangi” and “Sup Ayam Dara Ketumbar.”
