We are fortunate to get a sneak peek of the iftar buffet at Hilton Petaling Jaya, which will be offered during Ramadan later this year. Dinner is served at Paya Serai, the all-day dining restaurant of the hotel.
As per tradition, the dining area of Paya Serai is filled with festive vibrance!
Being one of the longest-operating hotels in Klang Valley, Hilton Petaling Jaya offers a nostalgic dining environment that is sure to resonate with long-time patrons.
Even with only half of the 300 dishes prepared for this evening’s preview, the buffet spread already leaves a positive impression.
Chef Ridzuan’s Signature Selections
Out of hundreds of dishes on the menu, Chef Ridzuan has hand-picked six signature dishes which he dubs as this year’s “hidden treasures”.
Pulut Kuning Bersantan & Serunding Gulung Dengan Pucuk Ubi
This appetizer innovates the maki roll with a playful, kampung-inspired twist. Traditional sushi rice is replaced with fragrant pulut kuning (turmeric glutinous rice), while seaweed is substituted by tender pucuk ubi (sweet potato leaves).
Kerabu Pucuk Paku Dengan Cendawan Kukur & Puyuh Goreng Rangup
This unique salad offers a delightful mixture of textures and flavors. Pucuk paku (fiddleheads), cendawan kukur (split-gill mushrooms), fried quail and kerabu dressing combine to form a refreshing and satisfying appetizer.
Daging Kepal Rebus Dengan Bawang & Cili Jeruk Bersama Kuah Masak Lemak
If you take beef, this delicacy is to die for! The beef meatballs appear to melt in the mouth! Their incredibly tender texture releases a burst of juicy flavor with each bite. The inherent sweetness of beef is further enhanced by a broth rich in coconut milk, culminating in a highly palatable dish.
Kambing Hiris Dengan BBQ Szechuan Dihidang Bersama Roti Mantou
Grilled lamb is dressed with savory BBQ sauce and sandwiched by crispy fried mantou buns. The bun’s subtle sweetness complements savory flavors of lamb, creating a well-rounded dish.
Ubi Kayu Tonyoh Dengan Bunga Talang
Hailing from the east coast of Peninsula Malaysia, this visually striking dish features grated cassava that is dyed purple using the natural extract of bunga telang (butterfly pea flowers). Remember to drizzle some gula melaka (palm sugar) syrup before enjoying this satisfying dessert!
Cendol Panna Cotta
This innovative dessert improves upon the classic Italian panna cotta by adding elements of cendol that Malaysians know and love. The creamy custard is topped with familiar ingredients like jelly noodles and gula melaka. An addition, a drizzle of honey fresh from the honeycomb makes this dessert simply irresistible!
Sup Gear Box & Soup Kambing
These savory soup dishes are bread and butter of buka puasa meals.
Feel free to customize your bowl with optional ingredients like ekor (oxtail) and perut (tripe). The rich soup also goes well with Roti Bengali.
Gulai Kawah
These are dishes served in oversized woks called “kawah”, reflecting the communal style of dining in the village. Today’s dishes include Gulai Kawah Daging Tetel Dengan Umbut Pisang, Tumis Darat Gulai Ikan Masin Talang Dengan Nenas, Ayam Masak Lemak and Kalio Ayam.

Asam Pedas comes in several variations such as daging tetel (beef), ayam kampung (chicken), ikan jenahak (snapper) and ikan pari (stingray).
One of my favorites is the asam pedas dish with telur ikan mayong (marine catfish roe)!
Masakan Salai Masak Lemak Cili Padi
A trio of smoked delights awaits: daging salai (smoked beef), itik salai (smoked duck) and ikan keli salai (smoked freshwater catfish).

Choices here are Lemang Pulut Hitam, Lemang Putih, Ketupat Nasi and Ketupat Palas.
Lemang and ketupat are best enjoyed with rendang and serunding (meat floss). Rendang types are Rendang Tok Daging, Rendang Minang Kambing, Rendang Ayam Pencen and Rendang Kerang. Meanwhile for serunding, there are beef, chicken and fish variants.
Roti Canai & Murtabak
These flatbreads are prepared fresh on the spot!
Goreng Station
Besides pisang goreng (banana fritters), there are also ubi keladi goreng, cucur badak and cekodok.
Apam Balik
This local snack is usually filled with crushed peanuts, sweet corn and sugar.
Potato Station
Enjoy freshly prepared Kizarmis Patates (Turkish fries) topped with a variety of dipping sauces: original, spicy & BBQ.
Aneka Bubur
Penang-Style Bubur Lambuk Daging is prepared this evening. This congee is commonly served during Ramadan. Meanwhile, sweet porridges here are Serawa Nangka Madu Dengan Sagu, Bubur Kacang Hijau Dengan Durian and Bubur Pulut Hitam.
Grill Station
Paya Serai has a dedicated grilling section equipped with hot plates and charcoal grills. This is where most of the action takes place.
