2024 New Year • New Culinary Delights at Le Méridien Petaling Jaya!

As the new year unfolds, Le Méridien Petaling Jaya’s all-day dining restaurant, Pasar Baru, remains a favorite among the masses. This year, Outlet Chef Shahrul Nizam and his crew are adding a touch of brilliance by introducing several new dishes to delight food connoisseurs. Let’s take a closer look at the exciting surprises that his team has prepared for us!

Indian • Homemade Dosa

Last year, Pasar Baru welcomed a new chef into its ranks. Hailing from the state of Tamil Nadu, Chef Arul Sebastian brings his rich culinary experience in South Indian cuisine to the fore.

Chef Arul does not rely on pre-packaged spice powders. Instead, his culinary philosophy is to blend all spices from scratch. This allows him to fine-tune everything from spice composition to cooking temperature. Even a small deviation can result in substantially different flavors.

Today, Chef Arul has prepared a dish that will soon be featured in the Breakfast Buffet – Indian Homemade Dosa, commonly known as Thosai in Malaysia.

It is revealed that Chef Arul follows his hometown recipe, insisting on soaking and grinding ingredients like lentils into rice batter to prepare Dosa. After tasting the crepes, we unanimously agree that Chef Arul’s Dosa indeed carries grainier aromas.

Dosa is served with Chicken Masala, Potato Masala and several chutneys, all made by Chef Arul himself. Both masalas are not overpowering, allowing the layered flavors of spices to leave a satisfying impression on the taste buds!

Chinese • Homemade Noodles

Moving to the Chinese section, Chef Izzat Zamri demonstrates how hand-cut noodles are prepared from scratch. Despite being less reowned than their pulled counterparts, hand-cut noodles remain very popular in China. This dish will be featured in the Weekend Hi-Tea Buffet.

The dough is kneaded and flattened into thin sheets. Using a sharp knife, the dough is cut into long noodle strips of uniform width.

Soup options are beef broth and fish head soup. The former is prepared from roasted beef bones, resulting in immense savoriness and soothing fragrance.

Due to their freshness, the noodles remain chewy and retain a subtle hint of floury aroma. It’s highly recommended to give the noodles a try!

Malay • Nasi Lemak Lamuni

Next, Chef Afifi Ghani presents his signature Nasi Lemak Lemuni, a rice dish originating from the northern regions of Malaysia. Lemuni, known scientifically as Vitex trifolia, is believed to have many health benefits. The rice is cooked using the “tanak” method instead of using a rice cooker, which is better in accentuating the aroma of coconut milk.

Nasi Lemak Lemuni, like regular Nasi Lemak, is typically served with sambal chili sauce, anchovies, cucumber, eggs and Rendang Ayam (chicken rendang). This quintessential dish will be served during the Hi-Tea Buffet.

Western • Salmon Gravlax

Salmon gravlax is curated by Chef Grery Pandak. This Nordic dish is poised to steal the limelight during the weekly Seafood Buffet!

Cured using salt and sugar, the salmon gravlax boasts richer flavors than raw fish but remains firm compared to cooked fish. Chef Grery’s creation is topped with various condiments and smoked salmon cream. The cream elevates the overall gastronomic experience.

The brilliance of this dish lies not only in the high-quality ingredients but also how each ingredient complements the taste of others!

Dessert • Mandarin Orange Lychee Terrine

At the desserts section, Chef John Wong crafts new pastries to commemorate each festive season. The cake for the 2024 Chinese New Year is a Mandarin Orange and Lychee Mousse Cake.
