3 Must-Try Chef Recommendations

Sultan Lamb Shank

The name of this braised lamb shank, “Sultan Lamb Shank,” resonates with grandeur, as the term “Sultan” refers to the rulers of various states in Malaysia. This dish is inspired by the famous Sultan Lamb Shank from Batu Pahat, Johor. The name likely comes from the generous size of the lamb leg used and its vibrant red color.

The choice of marbled cuts of lamb results in succulent and tender meat that practically falls off the bone after cooking. The meat is flavorful, almost melting in the mouth, and the tendons are delightfully chewy. This provides a satisfying but not overly greasy experience.

Ayam Panggang Bazooka

Ayam Panggang Bazooka epitomizes authentic Malaysian street food. Commonly found in many Malaysian towns, this dish ingeniously involves grilling chicken inside empty barrels!

The key to this dish lies in the well marinated chicken and the grilling process. Steam circulating inside the barrel results in perfect charring while keeping the meat juicy. The excess moisture evaporates, leaving behind a deep, bone-infused aroma.

Gear Box Soup

During the Ramadan season, Malaysians are greeted by the aroma of this popular delicacy – Gear Box Soup. This rich and flavorful beef bone marrow soup is perfect for breaking fast.

The unique name of this soup, “Gear Box,” becomes apparent when you see the femur that resembles a gear stick.

With a sprinkle of chili and green onions, the aromatic gear box soup is best enjoyed with Roti Bengali. The light and fluffy texture of Roti Bengali allows it to absorb the flavorful broth perfectly.
