Highlights of the Buffet

The theme of Ramadan buffet dinner this year is “Merentasi Tradisi: Sajian Dulu dan Kini“. Although the buffet spread may not be as glamourous as other hotels, each dish here is specially prepared with home-cooking goodness. Led by Chef Fadil, the culinary team has crafted a menu that bridges the gap between age-old recipes and modern creations.

Nasi Buluh

Nasi Buluh showcases the ingenious use of bamboo as a cooking vessel. This unique cooking method imparts subtle aroma and flavor to the rice. As for the taste, the rice is slightly sweet and has a hint of bamboo’s earthiness.

Pecal Salmon Percik Mangga Muda

Pecal Salmon Percik Mangga Muda is the brainchild of Chef Fadil’s creativity and resourcefulness. Salmon, an ingredient seldom used in Malay cuisine, is presented in the traditional cooking style of pecal. The use of young mango and coconut milk reflects the tropical abundance of flavors in Malaysia.

Pecal Salmon Percik Mangga Muda pairs wonderfully with Nasi Buluh. The pair bridges culinary traditions with contemporary ingredients. We highly recommend you to try out this combination!

Kambing Golek

Another star of the buffet dinner is Kambing Golek. The whole lamb is roasted over burning charcoal for the toasty aroma!

Laksa Utara

Laksa Utara is a noodle dish that hails from the northern states of Malaysia. The appeal of Laksa Utara lies in its broth, which comprises of a blend of fragrant spices and herbs.

The noodles are made of rice flour. Their light texture allows the rich broth to penetrate the strands thoroughly.

Unlike the more common Asam Laksa, Laksa Utara does not involve shrimp paste. Instead, the taste is mostly derived from fruits and vegetables.

Meanwhile, the Fish Ball Noodle Soup is more suited for diners who prefer milder taste.

Appetizer

There are DIY Salads and Composed Salads as appetizers.

When it comes to Malay appetizers, you can’t go wrong with Malay salads called Kerabu.
