Grand Millennium Kuala Lumpur is introducing a new festive dining experience at The Mill Café, led by newly appointed culinary leaders Executive Chef Mustapha Awang, fondly known as Chef Muss, and Sous Chef Andri bin Abdul Hadi.

Marking their first festive season at the hotel, the duo has introduced a curated evening buffet titled “Duo Chef, Satu Sajian di Bulan Mulia,” which brings together a harmonious blend of Silk Road inspirations, Nusantara influences, and traditional Malay cuisine.

A Crossroads of Heritage

Having spent years leading kitchens across China, Chef Muss has developed a deep appreciation for regional Chinese cuisines. A major highlight of this influence is the Xinjiang-style Imperial Roasted Whole Lamb, which reflects the slow-cooking techniques and robust flavors characteristic of the Silk Road.

Diners can also savor the Silk Road Spiced-Grilled Lamb Skewers, which are crafted to blend ancient trade route aromatics with local palates. These skewers are significantly larger than your typical satay, making them an incredibly satisfying choice for meat lovers. Highly recommended for those seeking a robust and flavorful bite!

For a comforting and hearty option, the Pak Muss Lanzhou Beef Noodle Soup offers a rich, flavorful broth that draws directly from the Chef’s creative vision and his extensive culinary journey through the heart of China.

In addition to the Silk Road specialties, Chef Muss introduces his creative take on a beloved regional classic with the Pulled Beef Brisket Bao Buns. This dish draws inspiration from the traditional Rou Jia Mo, often referred to as a “Chinese hamburger,” which is a staple of Lanzhou food culture.

Heritage Flavors

Complementing the Silk Road specialties, Sous Chef Andri bin Abdul Hadi, a culinary veteran with over 33 years of experience, serves as the master of authentic Malay heritage recipes.

Chef Andri focuses on preserving aromatic spice blends and the comforting tastes of traditional festive dining through several signature creations. Among his signature creations is the ‘Ayam Percik Rendang Tradisi’ Andri, a unique fusion dish that combines the smoky essence of grilled chicken with the rich, complex spices of traditional rendang.

Besides Malay style grilled fish, seafood lovers can indulge in the ‘Botok Botok Tenggiri Mantap’, a traditional delicacy where mackerel is meticulously prepared with a variety of herbs and spices to offer a deep, savory flavor profile.

For a taste of traditional Malay fermentation, the dessert spread features the classic Tapai Pulut and Tapai Ubi. Wrapped in traditional leaves to preserve their authentic aroma, these fermented treats offer a refreshing and cooling sensation that balances the rich, spicy flavors of the main buffet.
