Originating in 19th-century George Town, Nasi Kandar was pioneered by Indian-Muslim (Mamak) merchants. The dish gets its name from the wooden yoke (kandar) that hawkers balanced across their shoulders, carrying heavy baskets of hot steamed rice and rich curries down to the docks to feed harbor laborers.
