PARKROYAL Kuala Lumpur is a 5-star hotel in the heart of the capital city. The hotel is managed by Pan Pacific Hotels Group, which also operates PARKROYAL Penang Resort in Batu Ferringhi. The all-day dining restaurant in PARKROYAL Kuala Lumpur is called Chatz Brasserie.
This evening, PARKROYAL Kuala Lumpur is having an early preview of the upcoming Tropical Christmas Buffet. Held at Chatz Brasserie, the yuletide-themed meal is curated by Executive Chef Joseph Kuan. Today’s event highlights signature dishes that he has specially crafted for this holiday season.
Before the meal begins, we are served freshly baked Bengali bread with tapenade, sambal bilis (spicy anchovy relish) and masala curry. The sambal bilis goes surprisingly well with bread.
Chef Joseph is taking a unique approach to the Christmas menu this year. Instead of preparing traditional Christmas dishes, many delicacies are given a familiar touch of Malaysian flavors. This approach is clearly exemplified by the Baba Marinated Roasted Turkey.
As per tradition, the turkey comes with classic condiments like cranberry sauce and giblet sauce. As for diners who prefer flavors closer to home, Nyonya acar and Sarawak citrus pepper sauce are prepared too.
Next, the Turkey Breast Roulade is stuffed with cassava and tapioca leaves instead of the usual chestnuts. The roulade is delightfully succulent despite being made of lean meat.
As for seafood, the Pan-Seared Red Snapper is seasoned with a lovely blend of oriental spices. The fish is meant to be enjoyed with creamy Malaysian curry sauce.
Ikan Pais is one of the major highlights this evening. Marinated with Malay-style spices, the red snapper is grilled in banana leaves to keep the juices intact. Fresh coriander sauce is prepared to complement the heavily seasoned fish.
Johore Prawn Stew is cooked with a creamy sauce that is infused with spices like galangal and turmeric. The crunchy shrimps appeal to my palate.
Moving on, the Crispy Roasted Chicken combines poultry with fish paste. Both constituents are brought together though a layer of almond flakes. The delicacy is flavored with Thai-style condiments such as unripe papaya and sweet chili sauce.
Finally for pastries, the Giant Rainbow Durian Yule Log Cake presents an unconventional take on the popular Christmas dessert. The cake has 4 distinct layers: durian, pandan, coffee and teh tarik. The durian layer has the most prominent flavor.
