The New Poolhouse

The paleolithic and ketogenic diets have garnered attention recently as more people are adopting healthier dietary choices. In line with this trend, Grand Hyatt Kuala Lumpur has collaborated with an internationally renowned chef to curate a new menu for Poolhouse.

The man behind Poolhouse’s new menu is none other than Chef Daniel Green, the renowned celebrity best known for his appearance on Food Network. What sets Chef Daniel Green apart from his peers is his unwavering dedication to promoting healthy eating.

Previously known as Barbie Café, Poolhouse at Grand Hyatt Kuala Lumpur provides a tranquil dining experience in the middle of cosmopolitan Kuala Lumpur. The glass-encased restaurant is surrounded by lush tropical plants and a free-form swimming pool. Poolhouse offers both outdoor and indoor dining options, as well as unobstructed view of the show kitchen.

Grand Hyatt Kuala Lumpur is committed to promoting eco-sustainability. This commitment extends to the dining concept at Glasshouse too. The menu features environmentally-friendly ingredients, including freshly herbs and leafy greens picked from the hotel’s in-house Chef’s Garden, as well as vegetables grown on vertical racks cultivated Cultiveat, a local urban farm. Vegetable varieties include Butterhead, Summer Crisp, Coral, Oakleaf, Frisee, and Batavia.

Green’s BBQ

Healthy eating does not necessarily imply bland food. Chef Daniel Green’s menu is meticulously crafted to incorporate paleo and keto diets without compromising flavor.

Green’s BBQ is served every Friday and Saturday evening at Glasshouse. From an easy-to-read menu, diners can place unlimited orders of scrumptious dishes to their heart’s content. Food is cooked to order to ensure freshness and to avoid wastage. Besides grills and skewers, diners also enjoy small sharing plates, side trays and beverages to be served tableside.

While waiting for food to be served, diners can also help themselves to a variety of pastries, fruits and ice cream at the buffet counter.

Let’s delve deeper into each section to see what Green’s BBQ has to offer.

Small Plates To Share

As soon as one is seated, 6 interesting appetizers are served immediately. The mere sight of these small plates is mouth-watering indeed!

Turmeric sweet potato hummus

This dish consists of mashed chickpeas and sweet potato, blended with chat masala to create a delightful taste that is not overpowering. Chat masala and jalapeno peppers give the dish a hint of nuanced spiciness. The hummus is also garnished with curry leaves and for added fragrance.

Smokey eggplant baba ganoush

Inspired by the Levantine cuisine, this appetizer comprises of roasted, peeled and mashed eggplants. The dish is infused with the goodness of avocado oil. Almond dukkah, pomegranate seeds and microgreens serve as icing on the cake. With so many colors in the mix, this appetizer is also a feast for the eyes.

Seasonal vegetable crudité

Juicy vegetables go well with hummus and baba ganoush dips. The assortment of vegetables comprises of fresh asparagus, radishes, cherry tomatoes, celery, cucumber and julienned carrots.

Taco crackers are also provided to go with the dipping sauces. Alternatively, taro crackers can be consumed directly to enjoy the unique taste of taro in its purest form.

Barramundi ceviche

For seafood lovers, we have a special treat for you! The raw fish is marinated in a mixture of lime juice and coconut milk. Cut into bite-size pieces, the ceviche is served with shallots, almonds and coriander. The result is an exquisite appetizer that satisfies our taste buds.

Miso glazed tofu

The tofu is coated with a savory glaze of miso to enhance its flavor. It is complemented by eggplant, edamame, coriander, spring onions and microgreens. A dash of honey give the tofu a soothing taste on the taste buds.

Poolhouse green leaf salad

The medley of seasonal vegetables is to be enjoyed with passionfruit dressing. In spite of the tangy dressing, the salad is quite gentle on our palate.

Grill & Skewers

The show kitchen is where the action takes place. As soon as we order from the menu, the crew promptly fires up the charcoal grill. The choice of charcoal for cooking is deliberate: It adds a rustic smoky flavor that cannot be replicated with gas grills.

Taking advantage of high-quality fresh ingredients, the kitchen crew masterfully prepares the meats and skewers without excessive seasoning. Indeed, the dishes here are cooked with olive oil to minimize fat content.

Green’s BBQ offers a selection of 4 grilled items: salmon steak, lamb chop, black mussels and corn-on-the-cob. There are also 4 types of skewers: chicken, prawns in shell, beef sirloin and tofu.

Grill : Salmon steak

The salmon steak is flavored with zesty lemon, dill and aromatic soft herbs. The fish may be charred on the surface, but the flesh remains tender and juicy.

Grill : Lamb chop

The lamb chop is perhaps the main highlight this evening. Infused with garlic and rosemary, the lamb chop is grilled to perfection resulting in tantalizing flavors with every bite. We cannot recommend this dish highly enough.

Grill : Black Mussels

Compared to green mussels, black mussels have superior texture and richer flavor than their cousins. The black mussels are complemented by a savory sauce made from tomato sambal, lemongrass and kaffir lime. Surprisingly, the dish is not too spicy.

Grill : Corn-on-the-cob

Paprika rub is applied to corn-on-the-cob. Grilling over charcoal imparts a smoky flavor to the corn cob. In addition, the grilling process seems to enhance the natural sweetness of corn. Melted cottage cheese adds a creamy and savory element to the dish.

Skewers : Chicken

The boneless chicken is marinated with spicy soy sauce, and then brushed with honey glaze during grilling. Sesame seeds are sprinkled on top before the skewered chicken is served.

Skewers : Beef sirloin

Since premium beef is used, seasoning is kept minimal (black pepper and salt) to accentuate the natural flavor of beef. Diners can choose the level of doneness. Medium is our preferred choice.

Skewers : Tofu

The skewered tofu is coated with miso ginger glaze. Despite being surrounded by meats and seafoods, the tofu deserves commendation in its own right.

Skewers : Prawns in shell

The butterflied prawns retain their natural sweetness and juiciness, thanks to skillful grilling by the kitchen crew. A squeeze of lemon and coriander garnish makes this succulent dish even more irresistible!

There are porcelain jars of vinegar and olive oil at each dining table. This is in case diners need additional seasoning. This did not cross our mind because the dishes are already well-balanced in taste to begin with.

Signature Side Tray

Along with the barbecue, there is the signature side dish platter from Poolhouse. This platter follows the principles of keto and paleo diets, and despite its simplicity, it is delicious! Poolhouse has truly challenged our preconceived notions of healthy cuisine. Furthermore, despite having enjoyed several appetizers, we haven’t felt overwhelmed or overly full so far!

Wok-fried cauliflower rice

The “Yangzhou” Fried Rice is a fascinating dish! Poolhouse advocates reducing starch intake, so there is no rice in the restaurant. Instead, they use cauliflower rice as a substitute. This fried rice is made with free-range eggs, spring onions (a must-have for fried rice!), and soy sauce, creating a dish that closely resembles traditional fried rice. The flavor is authentic, reminiscent of Yangzhou fried rice!

Wok-fried barley & buckwheat

Wok-fried Barley & Buckwheat is a fried rice dish that substitutes rice with barley and buckwheat, providing a chewy texture from the combination of the two grains. This fried rice is inspired by the cooking method of Malaysian Nasi Goreng Kampung, resulting in a fragrant dish with a hint of spiciness. The ingredients include asparagus, bok choy, tomato sambal, and lime, all stir-fried in good-quality coconut oil, providing a satisfying and flavorful experience.

Roasted cherry tomato

Roasted Cherry Tomato is a relatively simple dish of roasted cherry tomatoes seasoned with oregano, basil, and sea salt. Roasting the tomatoes enhances their nutritional profile and intensifies their sweet and tangy flavors.

Smoked paprika roasted cauliflower

Smoked Paprika Roasted Cauliflower features roasted cauliflower with a smoky and charred flavor. It is topped with low-fat yogurt tzatziki and crushed peanuts, creating a delicious combination of textures and flavors.

Gochujang spicy baby potato

Gochujang Spicy Baby Potato is made from overnight-marinated baby potatoes that are roasted to perfection, resulting in a sweet and spicy taste. They are garnished with spring onions, sesame seeds, and nori, bringing a Korean touch to the dish. The potatoes are cooked until tender and soft, making them delightful to eat.

Poolhouse Signature Sauces

The side dish platter also includes Poolhouse’s signature sauces: Korean BBQ sauce, white truffle mayo, and salsa verde. The Korean BBQ sauce offers a sweet and spicy flavor, while the white truffle mayo is rich in texture and has a pronounced truffle taste. The salsa verde is not too spicy and brings its own unique characteristics to the platter.

Beverages

The meal comes with a variety of beverage options, including carbonated drinks, fruit juices, and signature cold drinks. The restaurant offers diverse beverage choices to cater to different customers. However, if you strictly follow a keto or paleo diet, it’s best to avoid soft drinks.

Additionally, there are cocktails and alcoholic beverages available, but they are not included in the meal and require an additional charge.

Guilt-Free Treats

Honeycomb

That is absolutely amazing! Fresh honey straight from the hive must be a delightful experience. The fact that it carries the natural floral aroma along with its sweetness makes it even more special. It’s wonderful that the honey at Poolhouse offers a unique and fragrant taste. The fact that it doesn’t cause throat irritation is a bonus. It’s definitely worth trying for anyone who appreciates the distinct flavors and benefits of fresh, pure honey. Enjoy your culinary adventure with the fresh honey at Poolhouse!

The dripping honey is actually honeycomb honey, which is thicker and more viscous compared to regular honey.

Key lime cheesecake

The honey and almond crust as the pie base, combined with lime and cheese, creates a refreshing and satisfying flavor combination that helps to balance the richness.

Coconut and mango

The jelly is made with a combination of coconut jelly, young coconut flesh, and chia seeds. It’s a refreshing and nutritious dessert that offers a delightful texture and a tropical flavor.

Berries parfait

The dessert features a simple combination of almond crumble and low-fat yogurt, topped with a variety of berries and garnished with edible gold leaf. The almond crumble adds a crunchy texture, while the low-fat yogurt provides a creamy and tangy element. The assortment of berries adds a burst of fruity flavors, and the edible gold leaf adds an elegant touch to the presentation.

Cinnamon pumpkin tart

The dessert features a creamy and rich cream cheese custard paired with roasted pistachios, which adds a delightful nutty flavor. The cream cheese custard brings a smooth and luscious texture to the dish, while the roasted pistachios provide a crunchy and aromatic element. The combination of flavors creates a harmonious balance, with the sweetness of the custard perfectly complemented by the slightly savory and toasty notes of the pistachios.

Gluten free orange pound cake

Whoever enjoy citrus flavors would likely appreciate this cake! The pound cake has a moist texture and, despite being gluten-free (meaning it doesn’t use flour), it is just as delicious as traditional pound cakes. The orange confit adds a fragrant and invigorating touch to the cake, while the almond and low-fat cream cheese contribute to its light and airy texture. I highly recommend giving it a try!

Homemade Ice Cream & Sorbet

Don’t miss out on the sorbets that are labeled with calorie counts! The sorbets, made in-house with quality ingredients, allow you to indulge without any guilt. The sorbet flavors include Avocado Chia Seed, Keto Coconut, Sugar-Free Chocolate, Peanut Butter, Strawberry, and Mango Passion Fruit. Among them, I highly recommend the Chocolate flavor. The chocolate taste is incredibly pure, and with every bite, you can savor the essence of the finest cocoa.

Locally sourced seasonal fruits | Dried fruit, nut and seed

Indeed, fruits are one of the most natural and delightful foods that require no cooking and can be enjoyed as they are. Ending the feast with a selection of fresh fruits would be a perfect choice, bringing a refreshing and healthy conclusion to the meal.
