Before roasting, the turkey undergoes a process of brining. This not only eliminates any inherent gaminess in the turkey but also results in a remarkably tender and juicy finished product! The only downside is that the preparation involves quite a bit of pre-work! 😝 And don’t miss out on the roasted vegetables, especially the Brussels sprouts!
Beef Wellington
A must-try British dish, the complex preparation involves searing beef fillet, spreading mushroom sauce, and wrapping it in puff pastry. The Beef Wellington here offers a rich, crispy pastry with layers of flavor, showcasing a complex and delightful texture.
Braised Beef Brisket with Hickory
Another highly recommended dish is the Braised Beef Brisket with Hickory. The hickory wood imparts a smoky flavor that, after slow cooking, permeates the brisket. The brisket, rich and tender like ribeye, maintains a perfect balance of fat, resulting in a soft texture and a dish with rich and diverse flavors! Personally, I also have a special fondness for the Yorkshire Pudding on the side – soft, with a rich eggy flavor, it’s a traditional Christmas delight.

The chef wraps a fresh whole salmon using dill and salt, creating a firm salt crust after baking. What makes it special is that this salt crust miraculously keeps the fish moist even after baking, and the fish absorbs a delightful aroma from the salt. When you bite into it, the flaky fish is juicy, refreshing, with a subtle saltiness, complemented by the fragrance of dill.
Seafood Paella Rice
This dish, Seafood Paella Rice, is a classic Spanish delight. It features golden saffron-seasoned rice that is not only aromatic but also serves as the canvas for a diverse mix of seafood.
