To truly enjoy Malay cuisine, a plate of good white rice is a must as a well-prepared plate of rice can elevate the entire dining experience. Take the rice at Table Talk, for example—it’s soft, fluffy, and holds its shape perfectly. This sweet, encapsulated grain is the perfect complement to the Pedas dishes! Plus, each plate comes with Chef Ahmad’s specialty sambal belacan, which packs a punch without being overly spicy, and is served with side salads.

Signtaure: Daging Masak Bali

Daging Masak Bali, or Beef Strips with Homemade Soy Bean Sauce, hails from the island of Bali in Indonesia. This dish is a staple of Balinese cuisine, celebrated for its intricate blend of spices and flavors. It involves slow-cooking beef with a variety of spices and soy sauce, allowing the meat to absorb the rich, complex flavors. The result is a dish that is hot, spicy, slightly sweet, and wonderfully aromatic. Since Daging Masak Bali requires more complicated cooking ingredients and processes, it usually appears at weddings.

Signature: Ayam Mangga Rangup

Ayam Mangga Rangup, or Deep-fried Chicken with Mango and Thai Sauce, is a captivating fusion dish that combines crispy fried chicken with the refreshing taste of mango and the tangy, spicy flavors of Thai sauce.
