This Merdeka month, DoubleTree by Hilton Putrajaya Lakeside takes fellow Malaysians on a culinary journey through the “Flavors of the Nation” buffet. Featuring heritage dishes such as Nasi Ulam Daging Bakar and Udang Galah Masak Lemak Cili Api, experience how Malaysian flavors have grown alongside our country — all in one spectacular spread.

Must-Try Signatures
Putrajaya Nasi Ulam Daging Bakar steals the spotlight this evening. This dish makes its mark first with the choice of rice — traditionally prepared with wild ulam leaves for herbal fragrance. The perfect way to beat the Malaysian heat!

Then comes the smoky revelation: thick cuts of charred daging bakar — their caramelized crust giving way to juicy tenderness. The beef and rice combine to create a perfect dialogue between heritage and contemporary flair.

Kaki Kambing Panggang Rempah Sangai Harimau Menangis is a modern take on the classic “Crying Tiger” dish, where tender lamb is used in lieu of beef. The name draws from folklore — legend says tigers weep in frustration for being unable to reach these prized cuts (the brisket or bottom sirloin) as they are nestled deep in the meat.

By using lamb, Chef Faizal Ghani creates a new taste profile while maintaining the incredible tenderness and succulence of the original dish. The recipe combines the rich, aromatic spices of the “rempah sangai” (dry-roasted spices) with the unique flavor of lamb, delivering a delicious and tender experience that lives up to its “crying tiger” reputation.

What a feast for the eyes — and the stomach! The moment you approach this vibrant station, the medley of colors and pungent aromas send your appetite into overdrive!

The Signature Curry Fish Head is a must-try — richly aromatic with perfectly balanced heat. Each bite delivers layers of spice without overwhelming fire, letting the fresh flavors of the fish shine through.

Neither soggy nor dry, Biryani Egg strikes that ideal balance with a subtle sweetness that keeps you coming back for more.

Moving on to a taste of tradition! This aromatic Bamboo Quail Biryani is cooked and served in hollowed bamboo, exactly how it has been prepared for generations. The quail meat becomes tender while absorbing the bamboo’s earthy sweetness. What a nostalgic yet luxurious take on this heritage recipe.

While the biryani is a magnificent dish on its own, the kitchen provides an array of traditional accompaniments to complete the experience.

We encourage you to load your plate with a bit of every dish — from the intense flavors of the fiery Crab Varuval to the refreshing zest of Raita.

Each element carries a unique taste, but the real surprise comes from the incredible and harmonious flavor combinations they create together.

Seafood Fiesta
Today’s seafood stars shine bright — Chili Coriander Manila Clam, Green Curry Razor Clam, Tom Yum Black Mussel, Sambal Gesek Marinated Yabbies and Scallop Assam Nyonya — all served chilled on ice with their signature marinades. This marinated seafood presentation is a signature of DoubleTree Putrajaya Lakeside — unlike anything you’ll find elsewhere.

Seafood lovers, now please proceed to select your favorite seafood items — fresh clams, yabbies, razor clams, crab, or mussels — and present your choices to the chef.

Choose between two signature sauces: Nyonya-style (aromatic Peranakan spices) or Kam Heong (Malaysia’s ‘golden fragrance’ with curry leaves and dried shrimp). The chef will wok-toss it à la minute with intense wok hei to seal in freshness.

Remember to present your card number when collecting your dish — enjoy it steaming hot to fully savor the aroma and flavors!

Authentic Malay Flavors
Malay food’s magic lies in its spices and herbs — every bite bursts with flavors passed down through the generations. This is a culinary journey not to be missed.

Begin your meal by warming your stomach with a gigantic bowl of Gear Box Soup — a clear, comforting broth that’s neither overly rich nor heavily spiced. The clean, warm flavors make it the perfect prelude to the meal ahead.

One of the highlights is the Udang Galah Masak Lemak Cili Api – a luxurious freshwater prawn dish simmered in velvety lemak (coconut cream) sauce that enhances the crustaceans’ natural sweetness. Fiery cili api peppers cut through the richness, while subtle turmeric lends earthy fragrance, creating a masterful harmony of spicy, creamy, and aromatic notes.

No visit is complete without exploring the bakar (grill) station — where skewers get their smoky char over open flames. Don’t miss that authentic grilled aroma!

Flavours of The Indian Kitchen
Next, let’s embark on a spice-lover’s journey through India’s culinary treasures.

Hot off the tandoor oven! From smoky tandoori meats to buttery naan breads, experience the subcontinent’s vibrant culinary heritage at its most authentic.

Still craving more Indian flavors? Don’t miss the made-to-order breads from the tandoor — especially the Roghni Naan and the Garlic Naan. Pair them with curries or enjoy alone — each bite is pure comfort. Highly recommended!

Treasures of the Chinese Kitchen
Let’s dive into the Chinese Kitchen. Discover authentic Chinese cuisine from roasted chicken with crackling skin to jade-white steamed fish!

For chicken rice lovers, savor succulent roast chicken (choose your favorite cut) with fragrant oil-infused rice. As for condiments, homemade chili sauce and ginger paste make a fiery-aromatic duo.

Fish fillet is steamed to perfection in traditional dim sum baskets. The fish is served piping hot to ensure maximum freshness and allow its natural sweetness to shine.

Starters & Essentials
As you explore, you’ll discover the foundations of a great meal: artisan breads with crackling crusts, soul-warming noodle soups and mouthwatering appetizers. Each element is designed to stand strong on its own while also seamlessly complementing the main courses.

Don’t miss the signature Focaccia. Served warm, this cloud-soft bread arrives with an irresistible aroma of olive oil and herbs. Its perfectly porous texture soaks up flavors while the golden crust delivers a satisfying crunch. Simply put: the best focaccia in town!

Today’s featured noodle soups are classic Chicken Soup and aromatic Nyonya Curry Laksa.

Sweet Indulgences
Save room for desserts! Dive into a carnival of sweetness, where every treat is crafted to delight your senses.

A cherished East Coast delicacy, Tepung Gomak‘s deceptive simplicity conceals the patience needed to master its chewy texture. The result is a pure, unadulterated flavor that shines with gentle sweetness and earthy depth of glutinous rice.

These vintage plates are pure nostalgia — just like the ones grandma used for our favorite childhood meals!
