This Merdeka season, DoubleTree by Hilton Kuala Lumpur invites fellow Malaysians on a culinary journey with its Raja Laut Malaysia Seafood Dinner Buffet. This feast celebrates the nation’s maritime heritage by featuring the freshest seafoods sourced from our local waters.

The buffet is served at Makan Kitchen, the hotel’s all-day dining restaurant. The menu highlights Malaysia’s abundant seafood harvest. Every seafood item here is proudly sourced from local fishermen.

The Signature Tandoori Yabbies reinvent the classic tandoori by infusing freshwater crayfish with aromatic spices, then charring them in a scorching clay oven for a smoky depth. This dish where Indian heat meets crustacean sweetness in one innovative bite.

Highly recommended! The Mud Crab Dum Biryani is where Malaysian mud crabs meet fragrant biryani. This dish is prepared in a sealed pot (dum), allowing the crab’s juices to permeate every grain of rice. The resulting rice is so aromatic and flavorful that it can be enjoyed on its own.

Served whole, the Poached Seabass is gently cooked to preserve its delicate, flaky texture. It is then topped with minced ginger gravy, scallions and bird’s eye chilies. These condiments add a punchy contrast to the fish’s natural sweetness.

Udang Masak Lemak Cili Api & Nenas Sarawak feature juicy prawns simmered in fragrant coconut gravy infused with turmeric and chilies. Sarawak pineapples contribute tangy sweetness that cut through the rich creaminess.

The Whole Baked Salmon Papillote is wrapped and cooked in foil. The foil packet allows the fish to retain in delicate moisture. Through this process, the salmon is infused with aromatic herbs and spices.

Also available this evening is Stir-Fried Flower Crabs in Sarawak Laksa Paste. The curry is moderate in spiciness, making it the perfect accompaniment to rice.

Seafood Au Gratin is a classic French delicacy with a Malaysian flair. Prawns and mussels are baked in crab shells with a delightful crust made of rich béchamel sauce.

This milder version of Kam Heong Flower Crabs retains the dish’s aromatics while being approachable for gentler palates. The spiced sauce accentuates the flower crabs’ natural sweetness rather than being overpowering.
