A Taste of Melaka & Johor

Melaka Style Fried Carrot Cake (Melaka) is a harmonious blend of savory, salty and sweet flavors. Soft radish cake cubes are enveloped in dark soy sauce, caramelized with smoky “wok hei” aroma.

Portuguese Style Steamed Seafood (Melaka) is prepared with zesty sauce that delivers multiple layers of flavor. The rich sambal infuses fresh seafood items with complex spiciness that is highly addictive.

Sup Tulang Merah (Johor) is defined by its thick crimson gravy. This savory depth surrounds the bone marrow, melting on the tongue with intense meaty richness.

Sambal Goreng (Johor) is a dish of mixed vegetables stir-fried with soy bean and chili pastes. It combines different textures in a harmonious manner — from the softness of tempeh to the juicy crunch of cabbage.

Lontong Nasi Impit (Melaka) is a comfort dish that consists of two key components: rice cakes (nasi impit) and vegetable stew (sayur lodeh). The coconut milk-based gravy is tasty to the last drop!

Asam Pedas Ikan Tenggiri Clay Pot (Melaka) contains both spicy and sour elements. This Melaka-style dish uses rich gravy infused with spices, enhancing the appeal of the fish.

For Udang Lemak à la Johor (Johor), prawns and pineapples are simmered in thick coconut milk, creating a complex flavor profile with subtle fruitiness.

Sambal Bilis Petai (Melaka) gets its rich taste from anchovies. The savoriness is complemented by crunchiness of stink beans, whose unique pungency is loved by many.

Kambing Gulai Kawah Rebung Madu (Melaka) features tender lamb immersed in a symphony of spices and coconut milk. Bamboo shoots lend their crunchy texture and unique aroma.

For Ayam Goreng Serai Sambal Jawa (Johor), fried chicken is infused with the soothing aroma of lemongrass.

Rendang Itik Pucuk Ubi (Melaka) uses fiery rendang gravy to negate the gaminess of duck meat. The presence of young tapioca leaves helps to balance this rich, savory dish.

Kacang Pool Ayam Cincang (Johor) is a popular breakfast dish due to its simplicity yet high nutritional content. The salad consists of broad beans, minced chicken, fried egg, toasted bread, chili peppers, onions and a squeeze of lime juice.

Unlike ordinary laksa varieties, Laksa Johor (Johor) is distinctively known for using spaghetti noodles. What an interesting blend of local and Western ingredients!

Moving to savory bites, Otak-Otak Muar (Johor) is a popular snack that consists of spicy fish cake grilled in palm leaves.

Another popular snack is Popiah Basah Isi Ketam (Melaka). Lovely crab filling is rolled in rice wrapper, and then topped with sweet sauce and fried onions.

Kerabu Nangka Muda Kelapa Sangai (Melaka) is made from young jackfruit flavored with coconut paste and a variety of spices. The salad has a combination of tangy and spicy flavors.

As for Tauhu Sumbat (Melaka), fried tofu is stuffed with shredded cucumbers and carrots. Spicy-sweet peanut sauce serves as the dressing.

Gado-Gado Kuah Kacang (Johor) also uses peanut sauce, but the salad uses more ingredients such as tempeh, hard-boiled eggs, potatoes, tofu and water spinach.

As for desserts, Bubur Kacang Merah and Bubur Pulut Hitam Gula Nipah are served. These warm porridges provide comforting warm with sweetness that tickles the taste buds.
