The buffet selection at Tonka Bean Café centers on a magnificent array of signature dishes, representing the very best of local and regional expertise.

First of all, guests are invited to savor local favorites such as the Nasi Briyani Gam Kambing, where succulent, marinated mutton is slow-cooked in layers with fragrant, long-grain basmati rice.

Also not to miss the Kurma Betis Kambing Palembang, which features succulent lamb shanks braised in a thick, nutty kurma gravy until the meat effortlessly falls off the bone.

For those who prefer a touch of heat, the Ketam Bunga Goreng Masala showcases fresh flower crabs tossed in a robust masala blend. This dish provides a burst of bold, aromatic spices in every bite, making it a favorite for seafood lovers seeking a bit of a kick.

Another highlight for seafood enthusiasts is the much-loved Kari Kepala Ikan Merah Palembang. This dish features a premium red snapper head simmered in a tangy and fragrant broth, balanced by a blended array of aromatic spices that represent the best of regional coastal cooking.

One of the most talked-about highlights among the live cooking stations is the Sup Gear Box dengan Urat MELETOOP! Also known as Sup Ganda, this robust and intensely flavorful bone marrow soup is slow-simmered at least twice to extract maximum richness.

To complete the experience, the soup is served traditionally with Roti Benggali for dipping, along with sambal hitam and various condiments to allow guests to customize the heat and flavor to their liking.
