Regional Highlights
Food is truly a living archive of our heritage. Over at Makan Kitchen, this special buffet brings together regional dishes you rarely see under one roof. The curated menu is packed with time-honored recipes, each telling a personal story straight from the chefs’ home states.

Eastern Delights
Let’s experience the rich flavors of each state, starting with traditional favorites from the East Coast.

Discover the true taste of Kelantan with Nasi Tupang. Wrapped in fresh banana leaves to lock in the aroma, this traditional delicacy layers fragrant rice with rich curries and your choice of fish, chicken, or beef.

History buffs will love to know this: Nasi Tupang originally started as a handy, on-the-go meal for farmers heading out to the fields.

Ayam Percik Kelate features smoky, spiced grilled chicken smothered in flavorful gravy rich in coconut milk. By the way, “Kelate” is the local slang of Kelantanese people addressing themselves!

Next up is the tangy, comforting broth of Singgang Ikan. This signature fish soup brings out the most aromatic flavors of the East Coast.

Ketupat Sotong is another iconic dish from Kelantan. The squids are stuffed with glutinous rice, and cooked in sweet coconut milk. The texture and flavor of this dish are heavenly indeed!

Northern Favorites
The journey continues up north, where bold flavors define the local palate. Let’s explore the time-honored staples of Kedah.

Laksa Kedah is a heritage flavor loved by generations. Distinct from Penang’s Asam Laksa, this aromatic fish-based broth omits pineapples and relies on asam keping for its sharp tang.

Rooted deep in northern heritage, Ikan Pekasam is a traditional fermented fish dish. The fish is gently pan-fried until the rice coating turns crispy and delivers a deeply satisfying savory kick.

Gulai Batang Pisang has been cherished by Kedahans for generations. Cooked with banana stems, the rich curry stands as a unique cornerstone of northern traditional cuisine.

Central Delicacies
The central region of Peninsular Malaysia is home to a diverse range of cooking traditions. This time around, Makan Kitchen takes the opportunity to bring Javanese flavors to the forefront.

Sambal Goreng Jawa is a vibrant combination of tempeh, tofu, and long beans stir-fried with aromatic spices. The dish brings a wonderful interplay of rich textures and savory depth.

Next, Gulai Tembusu is defined by its exceptional contrast of textures. The chewy outer layer gives way to a spiced filling that pairs well with seasoned coconut gravy.

Expand your palate with Gulai Tunjang Jering. This unique dish comprises tender beef tendons and jengkol beans simmered together in spiced coconut gravy.

Next, Puyuh Ungkep showcases traditional Javanese braising techniques. The quail is gently simmered over low heat in aromatic spice paste and minimal liquid.

Southern Classics
The culinary journey heads south, where intricate cooking techniques of Johor define the region’s heritage.

Nasi Biryani Dum is one of the signature dishes here. It is slow-cooked under a thick layer of pastry.

The pastry layer locks in all the rich, aromatic spices and tender meats, giving the rice dish immense savoriness.

Fun fact: The Persian word dum refers to a cooking technique where food is cooked in its own trapped steam.

Because the rice pot is covered with thick flour paste that acts like glue, this dish is sometimes also known as Nasi Briyani Gam.
Nasi Biryani Dum is typically enjoyed with a variety of side dishes. Every bite brings a delightful interplay of flavors and textures!

Meanwhile, the classic Ikan Asam Pedas delivers a sharp, fiery kick through tamarind broth infused with local herbs.

Conclude your southern culinary tour with Mee Bandung Muar. Its signature prawn-based broth delivers a delightful blend of sweet and savory notes.

Beyond the Main Spread
With a rotating menu of classic and contemporary dishes, the buffet spread offers a wonderful way to connect the younger generation to our nation’s culinary roots.

Harimau Menangis (“Crying Tiger”) refers to a prized strip of beef hidden beneath the ribs. Folklore says even the jungle’s top predator would cry in despair, knowing it missed out on this ultra-tender cut.

Deeply rooted in Kelantanese heritage, Lemak Bakar Berempah offers a smoky, spiced treat that is traditionally paired with steamed rice and fiery sambal.

Renowned for its smoky aroma and savory depth, Ikan Bakok introduces an authentic taste of Kelantanese culture. This iconic dish is distinguished by intact fish scales that lock in moisture during cooking and become crispy.

An iconic Johorean specialty, Sup Tulang Merah Gearbox features slow-braised beef shank bones simmered in rich, red gravy.

Sup Tulang Merah Gearbox is usually enjoyed with thick slices of Roti Benggali.

Patrons of DoubleTree Putrajaya Lakeside can always look forward to the signature Marinated Seafood on Ice. Each type of seafood is marinated in a unique spice mix.

As for Chinese cuisine, cooking styles vary from steaming to braising.

The dessert counter showcases an irresistible variety of traditional treats from across Malaysia.

Malaysian Handicraft
Extending the cultural experience beyond the dining table, DoubleTree Putrajaya Lakeside collaborates with Kraftangan Malaysia to showcase a rotating display of traditional handicrafts each week.

Besides learning more about our nation’s cultural heritage, diners can look forward to some hands-on activities with the handicrafts.
