Slow Roasted Wagyu Beef Leg
Chef Gerald has chosen the finest Australian M5 Wagyu for this culinary delight. Slow-roasting for 5 hours enhances the tenderness of the meat, preventing the loss of succulent juices that can occur with high-heat methods.
During the slow-roasting process, the marbling of the Wagyu beef leg becomes beautifully infused with its own rendered fat – a perfect marriage of rich fat and premium meat.
A dedicated chef expertly slices the Wagyu beef to ensure each guest gets to savor this magnificent creation.
Paired with festive essentials: Chicken & Chestnut Stuffing and roasted vegetables.
Citrus Tea Brine Roasted Chicken
The chicken used here is quite sizable, but thanks to the brining process, it still turns out to be wonderfully tender and juicy.
At the sauce station, several sauces are prepared to complement both the Wagyu beef leg and the roasted chicken. In addition to the integrated meat juices like Natural Jus and Thyme Jus commonly found in barbecue settings, there’s also Dijon Mustard and etc. One particularly unique offering is the Pommery Mustard – a French specialty mustard made by combining three types of mustard seeds. It boasts a mild flavor, and the texture and aroma are enhanced by the presence of mustard seeds.
Poached Whole Norwegian Salmon
Setting it apart from the common practices of consuming salmon raw, pan-seared, or teppanyaki-style, the Poached Whole Norwegian Salmon undergoes a cooking process where the fish’s natural oils infuse into the meat. Despite this, the salmon remains beautifully firm and offers a remarkably smooth texture when eaten. The classic way to enjoy it is to dip the fish in Cream Cheese or egg whites. However, local preferences often lean towards pairing it with Thousand Island dressing – and it’s all prepared here for you.
