For the month of February 2024, DoubleTree by Hilton Kuala Lumpur is collaborating with renowned chef Mike M.C. Wang, Executive Chef from DoubleTree by Hilton Taipei Zhongshan. This collaboration definitely adds a Taiwanese twist to the Lunar New Year celebrations!
The Elegant Dining Atmosphere
The buffet dinner is served daily at Makan Kitchen, which has been nicely decorated to suit the festive ambiance!
Round tables at the Chinese dining section make this place the perfect spot for reunion dinners. Wooden screens and partitions provide guests with a more exclusive dining experience.
For larger groups, the long tables are also great choices.
Taiwanese Guest Chef Mike M.C. Wang’s Signature Dishes!
Chef Mike M.C. Wang has three decades of culinary experience under his belt. He has crafted delicacies for Taiwan’s Ministry of Foreign Affairs, and served as a guest chef in several hotels in Kanazawa, Osaka and Mauritius. Under his guidance, the culinary team at DoubleTree by Hilton Taipei Zhongshan has created the acclaimed Chopped Pepper Stinky Tofu Beef Noodles, which won the third place at the 2023 Taipei International Beef Noodle Soup Competition.
DoubleTree Taiwanese Beef Noodle Soup
Chef Mike’s renowned dish, the DoubleTree Taiwanese Beef Noodle Soup is undoubtedly the highlight this evening. Compared to the original recipe served in Taipei, this version notably does not include chopped chili and stinky tofu.
The beef noodle soup is prepared à la minute. This is to prevent the egg noodles from soaking for too long, which can cause them to clump together and ruin the texture.
Chef Mike concocts the broth by simmering beef bones, beef meat, onions and other spices like dried chili. After several hours, the broth develops a rich, sweet and pleasantly spicy flavor profile. Selected cuts of lean beef rump offer the boldest flavor. The beef slices are tender but still preserve their chewy texture.
The rich broth and beef slices are best enjoyed with springy egg noodles. The fragrance of wheat and eggs permeates the air. The dish as a whole delivers a comforting sensation that warms both the soul and the stomach.
DoubleTree by Hilton Taipei Special Fish Head Casserole
Hailing from Tainan, Chef Mike introduces several hometown favorites such as Special Fish Head Casserole. During Chinese New Year, Taiwanese families often gather and enjoy this dish in a communal setting. Just imagine a steaming claypot filled with fragrant broth, bubbling away with crispy fish that is simmered to perfection.
The fish is complemented by the soft tofu that soaks up delightful flavors of the broth. With the inclusion of cabbage and carrots, the overall taste is rich in flavors. This makes the Special Fish Head Casserole a truly satisfying dish!
DoubleTree by Hilton Taipei Braised Eight Treasure Seafood Soup
Although it looks simple, this seafood soup is not to be trifled with. The broth is infused with rich flavors of seafood and a dash of vinegar, resulting in a harmonious blend of sweet, sour, salty, and savory flavors. Do not miss out on this exquisite dish!
Free Range Chicken with Young Ginger and Chili
This dish is commonly called “Three Cups Chicken” in Taiwan. The traditional recipe calls for one cup of rice wine, one cup of sesame oil and one cup of soy sauce. In compliance to halal requirements, this version replaces rice wine with chicken stock instead. Despite omitting rice wine, the chicken remains exceptionally irresistible!
Although labeled as a chicken dish, Three Cups Chicken is appreciated by connoisseurs for the ginger slices sautéed in sesame oil. As moisture evaporates, the ginger slices absorb the essence of sesame oil and acquire an aromatic flavor profile.
Shrimps Ball with Pineapple
Originating from Tainan, Shrimps Balls with Pineapple hold cultural significance as a must-have dish for weddings. The vibrant color of shrimp balls and pineapple chunks perfectly complement the festive atmosphere of Lunar New Year celebrations!
Fried to golden perfection, the crisp-coated prawn balls are dressed in creamy mayonnaise and complemented by the sweet and tangy flavors of pineapples. You definitely should not miss out on this classic Taiwanese dish.
Chinese-Style Oyster Omelets
This is another noteworthy highlight on the Chinese New Year festive menu. Fresh oysters are fried with egg batter right on the spot.
