Chef Mike M.C. Wang 王铭嘉 拥有超过三十年的烹饪经验,曾在知名国际酒店磨练厨艺,为台湾外交部创制佳肴,并作为客座厨师在 Kanazawa、Osaka 和 Mauritius 等知名酒店服务。在他的领导下,台北中山九昱希尔顿逸林酒店 厨艺团队创造出了广受赞誉的剁椒臭豆腐牛肉面,并在 2023 年台北国际牛肉面大赛中获得第三名

因此,Chef Mike 这次交流的重点肯定是为我们带来了这道招牌牛肉面;值得注意的是,今甫推出的大马版牛肉面暂时不含剁椒 &臭豆腐哦!

这里强调的是现点现煮的牛肉面;绝不会预煮后久放导致面坨

Chef Mike 以牛骨、牛肉、洋葱等食材为底,加入干辣椒等辛香料熬制汤头,喝起来浓郁甘甜却带点令人惊喜的微辣!严选的牛臀肉虽然偏瘦,但却是风味最浓厚的部位!经过卤制后,厚切的牛肉片软嫩入味,保有弹牙的嚼劲!

再加上搭配爽滑弹牙的鸡蛋面,煮后面粉与鸡蛋香气洋溢;整体层次丰富,而且吃了感觉非常暖心又暖胃!

砂锅鱼头 DoubleTree by Hilton Taipei Special Fish Head Casserole
Chef Mike 来自于台湾台南,因此这次他也为我们带来数道家乡料理!接下来的《砂锅鱼头》就是其一! 据 Chef Mike 透露,台湾有些地方会在过年的时候,全家围在一起吃砂锅鱼头,类似于围炉的氛围 ~ 可以想象一锅热腾腾的砂锅鱼头,滚烫的汤汁中翻滚着油炸后;鱼骨酥脆,鱼肉经过长时间的炖煮变得鲜嫩,还有那吸饱汤汁的白豆腐

这里是以自助餐的方式呈献砂锅鱼头:白菜与红萝卜增添了甜度,整体吃起来鲜味很足,而且很甘醇!
