Most dishes are best enjoyed with rice. Each plate of rice comes with Chef Ahmad’s special recipe of sambal belacan, which packs a punch without being overly spicy.

Daging Masak Bali

A staple of Balinese cuisine, this dish is usually served on special occasions due to its intricate preparation method. Beef is slow-cooked with a variety of spices and soy sauce, allowing the meat to absorb rich, complex flavors.

Ayam Mangga Rangup

Goreng Rangup Telur Masin

Terung Masak Belacan

This is one of our favorite dishes on the Pedas menu. Oil from sambal belacan seeps into the eggplant, softening the vegetable and infusing it with fiery flavors. In spite of this, the natural sweetness of eggplant remains intact.

Sambal Cili Api with Prawns

The chili paste is an all-stars blend of red chili, green chili, garlic and onion. The robust spiciness of chili peppers delivers an intense yet balanced kick. This dish goes particularly well with prawns.

Asam Pedas with Spanish Mackerel

Originating from Minangkabau cuisine, this appetizing dish offers a harmonious blend of spicy and tangy flavors. The tamarind-based broth is typically served with fish and okra.
