A RED Celebration
RED Chinese Cuisine is the hotel’s pork-free Chinese dining establishment. Located at Level 1, the restaurant presents a chic dining experience with its trendy ambiance.
As for guests who prefer a more exclusive dining experience, there are several private dining rooms too.
This evening, we are invited to a preview of one of RED’s Chinese New Year menus. The event commences the tossing of Yee Sang, which is presented in the form of a cool-looking snake!
Blessing Feast Set Menus
Between 20 January 2025 and 16 February 2025, RED offers 8- and 9-course Blessing Feast Set Menus in conjunction with Lunar New Year festivities. There are 4 menus to chose from. This evening, we are served the Stellar Prosperity Set, a 9-course meal including appetizers and desserts.
Prosperity Yee Sang with Soft-shell Crab
Today’s yee sang is a colorful medley of crackers, vegetables, pickles and sweet-tangy plum sauce. Fried soft-shell crab adds an extra layer of crisp to this starter dish.
Double-boiled Chicken Soup with Fish Maw and Dried Scallop
Stewed for two hours, this nourishing Cantonese soup is a treasured delicacy indeed. The fish maw is thick, pleasantly sticky and has an almost gelatinous texture. These are hallmarks of the maw’s high quality.
The presence of matsutake mushrooms and Japanese dried scallops intensifies the soup’s umami flavors. Surprisingly, the rich taste of soup is derived solely from chicken and seafood without the use of herbs.
Roasted Five Spice London Duck
“London Duck” refers to a roast duck delicacy that was popularized by a Chinese restaurant in London. Using Irish duck that is raised under strict conditions, the duck is noticeably more fragrant and has a unique fatty texture that does not feel surfeiting.
Steamed Tiger Grouper with Superior Soy Sauce
RED has a live stock of seafood. This explains why the grouper in this dish is so fresh. Cooked to perfection, the fish strikes a fine balance between springy texture and juicy flesh.
Crispy Prawn Meat with Pomelo Sauce
Tangy pomelo sauce complements well with the crispy prawns, creating a delightful balance of flavors and textures. The aesthetics of this dish is absolutely commendable!
Braised Whole Abalone, Sea Cucumber and Bean Curd Roll with Vegetable
The abalones are perfectly sized and braised to the perfect degree of doneness. Also present are slippery-smooth sea cucumbers that help to absorb savory flavors. Reminiscent of “siew mai” dim sum, the bean curd rolls contain minced chicken and are topped with dried oysters and salted egg yolks. Finally, sweet and juicy broccoli completes this harmonious dish.
Mini Lotus Rice with Dried Oyster and Salted Egg Yolk
This rice dish is certainly far from the ordinary. Wrapped in lotus leaves is sticky glutinous rice, which does a good job in absorbing the savory essence of dried oysters and salted egg yolks. Upon opening the pouch, the emanating fragrance makes this dish truly mouthwatering!
Chilled Osmanthus Oolong Tea with Peach Gum and Snow Bird’s Nest & Chinese New Year Rice Cakes
Two desserts serve as the finale of the 9-course set meal. Enhanced with fragrant osmanthus blossoms, the refreshing tea offers a soothing sensation that cleanses the palate. Complementing the soupy dessert are rice cakes presented in two forms: sycee (yuanbao) and spheres coated with crispy rice.
