This week, EQ Kuala Lumpur is hosting renowned celebrity chef Natsasi Noo-in, also known affectionately as Chef Natt. This event is made possible in collaboration with Meat & Livestock Australia, the supplier of premium beef cuts on which Chef Natt’s recipes are based. Her specialty dishes will be integrated into the Thai Meat Mastery Buffet Dinner at Nipah, and is only available from 25 June 2025 to 28 June 2025.

Chef Natt is the proprietor of Lady Butcher in Nonthaburi, Thailand. With over 15 years of expertise in butchery and red meats, she pioneered zero-waste cooking to ensure that every beef cut is transformed into exquisite dishes. Salad from Lady Butcher
The rump can be made into an excellent starter in the right hands. The Australian Beef Rump Carpaccio is served with jaew dressing, creating a symphony sweet, tangy, savory and spicy flavors. This salad is one of our favorites this evening!

Braised Australian Beef Short Ribs Salad another refreshing appetizer. The rich flavor of beef blends perfectly with the sweet tang of pomelo and fresh breath of mint.

Next, the Australian Lamb Loin Larb is a must-try dish! These meatballs are crispy on the surface yet succulent inside. The fragrant aroma of herbs like basil delights the palate with every bite!

Prime Cuts from Lady Butcher
Moving to main courses, Grilled Australian Beef Rib Eye is dressed in roasted rice and black pepper sauces. Each element accentuates the beef’s natural jus without being overpowering. The dish is served on banana leaves to enhance its aroma.

The tender Braised Australian Lamb Shank is served in soy-based jus, making it sumptuous to the last morsel.

Unlike coconut-based curries, the Australian Beef Topside Gaeng Om is light and brothy. This allows the premium quality of beef to shine through. The beef slices absorb fragrant essences of Thai herbal curry while still retaining its natural sweetness.

Infused with aromatic spices, the Thai Spiced Braised Australian Beef Brisket is served with sour cream to balance out its bold flavor.

Australian Grain-Fed Beef Picanha Steak can be enjoyed with makwaen jaew sauce and sticky rice, which are served separately.

More Surprises from Thailand
Hailing from northeastern Thailand, Tom Saap is infused with mushrooms, lemongrass and other herbs. This rustic soup is quite soothing and serves as a palate cleanser.

The Thai Green Curry Chicken contains pea-sized eggplants that are crunchy and have bitter aftertaste.

Delight your sweet tooth with Mango Sticky Rice Trio. Sweet mango is served with glutinous rice of different colors, making the dessert even more appealing. Remember to drizzle some coconut milk before enjoying this dessert.

Bua Loy comprises of chewy rice balls cooked in sweet syrup based on coconut milk. As per tradition, poached eggs are also added.
