Step into the heart of Makan Kitchen at DoubleTree by Hilton Kuala Lumpur on a journey of Malaysian flavors! The Crafted by Culinary Masters series brings together nine accomplished chefs, each sharing his/her culinary passion with a unique signature dish. The promotion is held for nine consecutive weeks starting October 2025, allowing one dish — and the corresponding chef — to shine each week.

The buffet dinner is served from 6:30pm to 10:00pm on selected days of each week:

  • Tuesdays to Thursdays: RM 128 net per adult, RM 64 net per child
  • Fridays and Saturdays (seafood special): RM 189 net per adult, RM 95 net per child

Kelantanese Ulam Poke Bowl by Chef Fatin

We kick off by trying Chef Fatin’s signature dish: Kelantanese Ulam Poke Bowl with house-made budu bergamot vinaigrette. This appetizer offers a brilliant blend of east coast tradition and modern health-conscious palate.

The cured tuna serves as a luxurious highlight, adding a desirable substance and rich texture that beautifully elevates the flavor profile of Chef Fatin’s modern poke bowl.

To fully enjoy Chef Fatin’s Kelantanese Ulam Poke Bowl, start by viewing it as a customizable experience. Pick your favorite ingredients and place them into the mortar.

Then, add a generous amount of the signature house-made budu bergamot vinaigrette.

The final, crucial step is to mix everything thoroughly. This process allows the tangy, spiced vinaigrette to coat every ingredient, blending the modern quinoa and cured tuna with the traditional ulam flavors.

Once everything is well combined, you are ready to enjoy the bold, layered flavor experience. This combination is far from subtle. It delivers a bold, flavorful experience in a contemporary, healthy bowl.

In celebration of the Deepavali festive spirit this October, the Indian section of Makan Kitchen will host A Great Diwali Cook-Off on 21-25 October 2025 (6:30pm-10:00pm). The cook-off will feature two master creations: Line Caught Fish Tikka with Curry Couscous and Meetha Dahi by Chef Raj (Executive Sous Chef), and Badami Jhinga Korma by Chef Sugu (Junior Sous Chef).
