Get ready for a spectacular culinary journey this Deepavali season! Kampung Kitchen at ibis Kuala Lumpur City Centre is lighting up the festive month with the Lights & Flavours Diwali Celebration Buffet.

Running for two weeks, the buffet promotion is a collaboration with Novotel Ahmedabad in India. The guest chefs are Executive Chef Shravan Kumar Sharma and Chef de Partie Ajaypal Singh.

A Taste of India
The guest chefs have curated authentic Indian delicacies that promise to deliver a delightful gastronomic experience. They are staying at ibis KLCC to ensure that the 2-week feast is authentic and stays on top of the game.

Appetizers
The journey begins with Indian appetizers that are crafted to awaken the palate. The Mughlai soup Tomato Dhaniya Shorba serves as the ideal palate cleanser. Prepared from fresh tomatoes, the light broth is utterly comforting thanks to the infusion of coriander.

For savory vegetarian delights, try the Hare Mutter Ki Shammi. These green pea patties are known for their soft texture and subtle spiciness.

Seafood lovers are naturally drawn to Tawa Fish Fry, where fish is marinated with fiery spices. The fish is then fried on a griddle called “tawa”. The resulting dish delivers satisfyingly zesty flavors.

Bhatti Ka Murgh is a classic Punjabi dish. The chicken is first marinated, then slow-roasted in a traditional clay oven called “bhatti”. This results in tender and smoky spiced poultry.

Main Courses
The main dishes span the geographic breadth of the subcontinent. From the western coast, experience the tangy heat of Goan Fish Curry. This Portuguese-style dish is prepared from coconut milk simmered with red chilies and vinegar. The curry delivers a sour-spicy kick.

Hailing from the north is a popular dish called Murgh Makhani or “Butter Chicken”. Chicken chunks are bathed in tomato-based gravy mellowed with butter and fenugreek.

Next is Mutton Rogan Josh from Kashmir. The mutton is braised in a maroon gravy made from dried Kashmiri chilies and ginger. We appreciate the fact that the mutton is exceptionally tender and savory.

Vegetarian options include Paneer Butter Masala, a creamy dish of paneer cheese in buttery tomato gravy.

In the case of Dom Aloo Kashmiri, baby potatoes are slow-cooked in yogurt-based gravy infused with spices.

Finally, Dal Makhani is a popular north Indian dish where black lentils and kidney beans are slow-cooked in butter and cream for several hours.

Pair all these curries with fragrant Jeera Peas Pulao, a rice dish where basmati rice is lightly seasoned with cumin seeds and sweet peas.

You may add Green Chili Pickle to the rice too.

Alternatively, you can also pair the main dishes with Naan, freshly baked in the tandoor oven.

Indian Street Food
Indian street food is presented as live action stalls. One example is Pav Bhaji, a famous afternoon snack from Mumbai.

This dish consists of thick vegetable mash cooked in butter. It is served with soft bread rolls that are lightly toasted.

Meanwhile, Pani Puri is an iconic snack from northern India. These crispy, hollow balls (called “puri”) are filled with spiced potatoes and chickpeas.

There are two ways to enjoy Pani Puri: with teekha pani (spicy sauce) or with khatta meetha pani (sweet and sour sauce). The trick is to pour either one into a puri, and then pop the entire ball into the mouth. Experience the fresh burst of flavors in one delightful bite!

Muruku varieties include Spicy Muruku, Pakoda Sivel, Curry Muruku, Mix Muruku and Fish Muruku. Be sure to try them all!

Classic Indian Desserts
Let’s move on to decadent Indian sweets, starting with the Keshari Phirni. The rice pudding is cooked in milk and infused with aromatic saffron. The chilled dessert has a pleasant aroma.

Enjoy the soft texture and sweetness of Gulab Jamun. Made from milk, these bite-size dough balls are deep-fried until brown, and then soaked in warm syrup.

Last but not least, try a serving of soupy dessert called Payasam. Made from rice and vermicelli, the sweet pudding also contains dried fruits and nuts.

At the drinks section, you may want to try some Nimbu Pudina Sharbat, Aam Lassi (mango smoothie) and Masala Tea.

While the guest chefs prepare authentic Indian flavors, regular diners can still enjoy familiar dishes of local and Western cuisines.
